STDU Viewer can extract text from pdf files easily. Nothing is perfect of course and there are several ways to extract from pdf files but this is easy. Just load the file with STDU, highlight the text you want (or use the "toots" menu), right click and "save to file". The Program is available as portable.
I like being able to simply grab a portion of text which is what we normally want to do.
From the tools menu choose select image and whatever you highlight can be saved as a bmp file.
