Salsa

I used this recipe. My first try at salsa and it is outstanding. I'm sure there may be delicious additional ingredients to try.

6 - 8 large fresh, flavorful tomatoes about 6 cups - Roma works great
2 scallions, finely minced
1 cup FRESH cilantro, chopped, no stems
6-8 cloves garlic, minced (used a press)
1/4 cup chopped FRESH oregano
2 tablespoons Jalapeno pepper, minced (more if your taste buds can handle it)
1 red pepper, chopped
2 yellow peppers, chopped
1/4 cup olive oil
3 tablespoons FRESH lime juice (I squeezed one lime)
Salt and Pepper to taste

I love chunky salsa so I chopped all the tomatoes,scallions, cilantro, oregano by hand for fear of getting it too soupy. By the time I got to the peppers, I was sick of chopping and pulled out the little Cuisinart and pulsed. It worked very well and I would use it for everything except the garlic next time.
The most tedious part of this recipe remains pulling the cilantro/oregano leave and chopping them. I see an "herb scissors" in my future.
I can not overstate how superior this salsa is compared to any store bought I have tried. I will use more Jalapeno next time.
